One of the secrets to our fruit-forward Boco range is the renowned Charmat method, used by only a select few wine producers in the UK. This clever technique allows us to capture the essence of the grapes, including celebrated varieties such as Pinot noir, Pinot blanc and Chardonnay. The result? A sparkling wine that’s refreshingly different, joyfully bold and unmistakably ours.

Our Charmat method sparkling wine isn’t just made, it’s crafted with purpose. Each step is designed to preserve fruit, maximise flavour and celebrate winemaking done differently. Here’s how we do it:
Step 1:
GRAPE SELECTION
We start with handpicked grapes grown in West Sussex
Step 2:
Primary fermentation
The grapes are gently pressed and the juice is fermented into base wine
Step 3:
Second fermentation in tank
The base wine is transferred to a pressurised stainless steel tank. Sugar and yeast are added
Step 4:
The bubbles happen
The pressure creates carbon dioxide and the wine becomes sparkling
Step 5:
Bottling
The sparkling wine is bottled under pressure, locking in the freshness and flavour
